The Vegan Beach Club. I heard they discontinued sprouts again. I worked at a Jimmy John’s ten years ago so naturally I was able to make this sandwich with no effort beyond muscle memory. Sometimes we’d try and guess what sandwiches people would order as they walked in the door. I got pretty good at it.

THE VEGAN BEACH CLUB

prep time: 5 minutes
assembly time: 30 seconds

Jimmy is still a massive prick and the thought of him trampled by elephants brings me joy.

Now as the menu item is as is, this one requires you to slap some mayo onto both sides of a 8” loaf of French bread, add tomatoes and cucumbers atop the tomatoes. Stick avocado between two slices of provolone and add four slices total. Add lunchmeat, sprouts and shredded lettuce. Make sure you wash the sprouts.

What you’ll need:

  • french bread

  • vegan mayo

  • tomatoes (roma)

  • cucumber

  • vegan provolone

  • avocado

  • vegan turkey slices

  • alfafa sprouts (optional)

  • iceberg lettuce

Rinse your veggies. And then do it again. Slice up a roma tomato and a cucumber. Shred up some iceberg lettuce and stow away the rest in a container for sandwiches for the week.

If your provolone is square shaped, use a glass to carve out a circle shape. Open your avocado and throw that into a ramekin and stir until smooth.

Now slice open your bread, throw a glob of mayo on it and spread corner to corner. Add your tomatoes and cucumbers. Add your cheese/avocado/cheese on top of the cucumbers.

Throw the turkey slices on there, add a little less than a fistful of sprouts and as much lettuce as you can shove in there. Use a knife to help close the sandwich and feel free to wrap it in paper for the full experience.

Sometimes I’d make extra sandwiches and bring them to the Starbucks across the street for free coffee.
