Buffalo & BBQ Cauliflower Wings
Cauliflower Wings. There are many recipes like it, but this one is my own. Double coated to ensure max crispiness even when slathered in sauce. This recipe is a double feature: BBQ & Buffalo.

Crispy Cauliflower Wings. They’re naturally boneless.
It is better to have been lost in the sauce than to have never sauced at all.
This recipe requires you to double batter some cauliflower wings and fry them. If you do both flavors, you’ll need two cauliflowers.
To start, you’re going to break apart that cauliflower.

Cut the non-edible part from the cauliflower and break it up into florets. If you want to, you can just buy florets from the store but this is a little more cost-effective.
Once your cauliflower is now a bunch of smaller sized cauliflowers, add them to a mixing bowl.
Now you're going to season the cauliflower. I’ll be listing the buffalo and bbq versions both. If you have an olive oil spray, spray a little bit on the cauliflower florets and your seasonings will stick easier. Or just use regular olive oil, whatever.

smoked paprika
dried dill (optional)

Now that you’re cauliflowers are dusted with seasoning, let them sit for a bit while you get your dry mixture & wet mixture prepared.
Note: I never said these were healthy.
Before getting started, get out a pot (or something capable of being your frying vessel) and add vegetable oil. Let it get hot and you’ll be frying these right around 325°.
I did the buffalo first and then the bbq just so I wouldn’t have a thousand dishes to tend to, but feel free how to go about it as you please.
What you’ll need — buffalo
Dry mixture:
all purpose flour
cornmeal
bread crumbs
salt
pepper
cayenne
garlic powder
onion powder
Wet Mixture:
soy milk
apple cider vinegar
frank’s

Dry mixture:
all purpose flour
cornmeal
bread crumbs
salt
pepper

smoked paprika
Wet Mixture:
soy milk
apple cider vinegar
maple syrup
In a large bowl, add three cups of flour and one cup of cornmeal. Add two tablespoons of bread crumbs. Add one tablespoon of each of the seasonings. This is your dry mixture.
In another large bowl, add two cups of soy milk and 3/4 cup of apple cider vinegar. Add a splash of Frank’s or maple syrup, depending on which wings you’re making. You can use oat milk if you want.
Take each cauliflower and dredge it in your flour mixture. Dust off any excess and then dunk it in your wet batter. Shake off excess and then back into the flour mixture. Set aside and repeat until all of your cauliflower are coated.
Being very careful, test the temp on your oil and then add 3-4 cauliflower wings at a time. I move them around a little bit at first so they don’t get stuck to the bottom of the pan god forbid. Fry until golden brown. It’ll take 3-5 minutes so don’t stray too far. Repeat until you’re outta cauliflowers.
Once all of your wings are fried, put them in a bowl and they will now get lost in the sauce. First here is buffalo and keep scrolling for barbecue.

vegan butter
In a measuring cup, add a big knob of vegan butter. Stick it in the microwave for like 15 seconds to melt it down some. Once it’s melted, add a little more than double the amount of Frank’s.
Slowly add it onto the fried cauliflower wings and give it a good tossing. Add some black pepper and cayenne pepper on there too if you want. I know I did.
And now for the bbq! For these, I blended two barbecue sauces together. One was thicker and one was runny so I wanted a consistency that would coat the wings perfectly.

a second barbecue sauce of your choice
or just however you wanna do it
With your cauliflower wings in a bowl, add your sauce and toss the wings. Stick em on a plate and serve with whatever else you feel like eating.
