The Vegan Crème Brûlée

Vegan Crème Brûlée — it sounds fancier than it is!

The Vegan Crème Brûlée — “burned cream” doesn’t sound as nice.

THE VEGAN CRÈME BRÛLÉE

prep time: 5 minutes
cook time: 10 minutes

This recipe requires you to toss some (full fat) coconut milk into a pot with some egg replacer, other stuff…and have a kitchen torch on hand.

What you’ll need:

  • full fat coconut milk

  • vanilla extract

  • vegan butter

  • egg replacer

  • sugar

  • lemon

  • salt

To start, get out a pot and add a full can of coconut milk. Bring the heat up to medium and just keep whisking. Add a quarter cup of sugar. WHISK!

Next you are going to add a little less than a quarter cup of egg replacer. So toss that in there and keep whisking. Add a few drops of vanilla extract too. Bring the pot up to a boil. You better be whisking. Toss a pinch of salt in there.

Not perfect, but it will do!

Perfect, we’re done here. Dig in.

While you continue to whisk, squeeze some lemon juice in there without letting the seeds fall in.

Keep whisking for like two more minutes until your mixture is nice and thick. The texture is gonna get a little gooey and that’s fine. Just whisk. Add a big fat knob of vegan butter. Keep whisking.

Drop the flame to a simmer and keep whisking. Now you are going to transfer your mixture into a few ramekins.

Tip: Transfer all the mixture into a measuring cup first, then the ramekins.

Take your ramekins and stick them in the fridge for a few hours to set. It takes maybe about two hours but the longer, the better.

After that time has gone by, pop them out of the fridge and grab that sugar from earlier. Sprinkle a layer of sugar on top of the mixture. Now get out your kitchen torch assuming you have one because you made it this far. If you don’t, I guess you could try sticking them under the broiler in your oven but I have not tried that method myself.

Take your torch and using the flick of your wrist, burn the layer of sugar. Moving swiftly, thoroughly flame the sugar.

After the layer of sugar is charred, you can eat it straight or you can add some stuff to it. I grated some lemon zest on mine with blueberries and mint leaves. This part is up to you, I trust you.
