Vegan Bourbon Apple French Toast

French Toast. A simple, delicious, doughy breakfast that I decided to veganize and add some other stuff to. You can add whatever you want but for this I went with caramelized apples and bourbon. N/A subs also listed.

VEGAN BOURBON APPLE FRENCH TOAST

prep time: 10 minutes
cook time: 20 minutes

Feel free to add more powdered sugar too.

This recipe requires you to make a French toast batter and add some other stuff.

First you’re going to cut your bread into thick slices. Or just use sandwich bread, whichever,

What you’ll need:

  • bread slices

  • just egg

  • oat milk

  • nutmeg

  • cinnamon

  • vanilla extract

  • salt

  • bourbon (or rye…or omit completely if you don’t drink)

  • vegan butter

In a large bowl, add half of a container of just egg. Then add a splash of oat milk. Toss in a teaspoon each (or more) or nutmeg, cinnamon and then add a pinch of salt. Add a teeny tiny splash of vanilla in there too. Add.a splash of bourbon (if you don’t imbibe, try adding a splash of apple cider or soda to the mix.) Give it a whisk.

Throw a knob of butter in a nonstick pan and bring the flame up to medium heat. You want the butter to bubble up but not brown.

Next you’re going to dunk and completely coat your first slice of bread and toss it into the pan. Cook for about two minutes on each side, add a little butter if the pan starts to dry out. Call it a minute and a half if you’re using thinner slices of bread.

Continue the process until you’re out of bread. Stack all of your bread and give it a nice diagonal cut if you wish.

Next, you’re going to caramelize your apples. You can keep the toast in your oven to keep it warm. Or microwave it I suppose. I did the apples while the French toast was going so feel free to do whichever you are most comfortable with.

What you’ll need:

  • vegan butter

  • brown sugar

  • apples

  • bourbon (or apple cider vinegar for n/a)

  • powdered sugar

Cut one or two apples into slices. Add a knob of vegan butter into a new pan. I used stainless here. Medium low flame.

Once the butter is bubbling, add two tablespoons of brown sugar. Use a spatula and give it a stir so the sugar doesn’t burn.

Toss your apples in and evenly coat them. Let them stew in the sugars a little bit and then we can bump the flame up in about two minutes.

Keep moving these around in the pan to coat.

Once the pan mixture is a little stickier and thicker, toss another splash of bourbon in there to deglaze and watch your eyebrows. Use apple cider vinegar instead of bourbon for n/a.

Now kill the flame and you have a beautiful looking and smelling pan full of apples.

Now put your French toast onto a plate, sieve some powdered sugar on there and drizzle the whole pan of apples & mixture atop the vertical monstrosity of French toast.
