The Vegan Double Decker

The Vegan Double Decker. The first and last time I will ever buy hard shells tacos.
The beans are the glue holding this house together.
This recipe requires you to set aside your morals and buy the ingredients for white people tacos. Yes, I’m talking lettuce, tomato and ground beef. And cheddar cheese. Oof! Hard shells! Flour tortillas! AH!
To start, you’re going to prep your veggies.
What you’ll need:
tomato
lettuce
As the picture above implies, chop up your tomato and lettuce.
Next, you’re going to get your “ground beef” going. I used the Impossible brand, feel free to use whatever.
What you’ll need:
plant based meat
salt
pepper
olive oil
cumin
garlic powder
onion powder
chili powder
tomato paste
soy sauce (or coconut aminos/tamari)
vegan worcestershire
Take your plant based meat and huck it into a bowl. Use the entire package. Add a tablespoon of all the above seasonings except cumin. Add two and a half tablespoons of cumin. Add a splash each of the soy sauce, worcestershire and then a generous squirt of tomato paste. Give everything a good mix and heat up some oil in a pan.
On a medium flame, add your pile of plant based meat. Let it cook for a little bit and stir occasionally. It will become easier to break once it starts cooking out. The dog food that they pass as meat at Taco Bell usually has a wetness to it, so if your mixture starts to dry up some, add a little olive oil and soy sauce.
When your meat stuff is good to go, drop the flame to a simmer.
Next, you’re going to prepare the refried beans and flour tortillas and then put it all together.
What you’ll need:
vegan refried beans
flour tortillas
hard shell tortillas
olive oil
Because this is the furthest thing from an actual taco, add your refried beans into a bowl with a splash of olive oil. Stir it up a little bit and then microwave it for a minute. Stir it up again and then microwave for 30 more seconds.
In a pan, add a little bit of olive oil and bring the flame up to medium-low. Toss a few flour tortillas in there and flip when they’re ready. Take them out and then spread your refried beans on one side of the tortilla. Now put your hard shell tortilla in there like a strange, taco sandwich without breaking the hard shell.
Now add your meat stuff, tomato and lettuce. Top with vegan cheddar shreds.
